Fun Fact: 100% Chardonnay — the variety Wiston has won the most awards for over the years, its chalky South Downs soils suiting the grape perfectly. Whole bunches are pressed through a traditional Coquard basket press, as used in Champagne, then aged over two years on the lees before disgorging.
